For players who would like a little more information on the differences between the options, it seems thatthe higher the difficulty, the more damage you will take from enemies and the less damage you will do to enemies.

And according to some research from TheEmpressDescends on thePersonasubreddit, if you play on Hard mode, you will take about 1.3x damage from enemies. You’ll also deal 0.8x damage. And for Merciless difficulty, you’ll take about 1.7x damage and deal 0.6x damage to foes. It appears that no matter the difficulty you choose, XP gain from defeated monsters and bosses are not affected at all.
